Back in those days, most of us didn’t even realize that making dairy-free cheeses at home was even a possibility. Life would have been so much different if I had Claudia Lucero’s book <em><a href="https://amzn.to/2XdXAR7" target="_blank" rel="noopener">One-Hour Dairy-Free Cheese </a></em>back then!</p>
<h2><span style="color: #993366;"><em>One-Hour Dairy-Free Cheese</em></span></h2>
<p>As you can tell by the title, <em><a href="https://amzn.to/2XdXAR7" target="_blank" rel="noopener">One-Hour Dairy-Free Cheese </a></em>is chock-full of vegan cheese recipes. These aren’t just “blend some cashews with nutritional yeast” kinds of recipes. They are ingenious recipes for cheeses such as Brie, Havarti, and Swiss using seeds, nuts, and vegetables that have been developed by a traditional cheesemaker.</p>
<p>I have a few dairy-free cheese cookbooks, and I think that <em>One-Hour Dairy-Free Cheese </em>is the most thorough. It’s very clear that Claudia has done her research and knows her cheese well.</p>
<p>For those that are new to DIY fromage,<em>One-Hour Dairy-Free Cheese </em>includes lists of equipment needed, specialty ingredients, pantry basics, and cheese-making tips. And then, of course, there are the recipes! You’ll find yourself drooling over these creamy creations, including Mozzarella Caprese, Golden Swiss, and Lemon Garlic Feta.</p>

<p>In addition to blocks and wheels, there are also recipes for dips, fondues, spreads, shakes, and even slices. Claudia has also included basic fermentation instructions, a few cultured and aged cheese, and recipes for cheese accompaniments.</p>

Depending on your machine, this could take 1 minute to 6 minutes. (Stop every minute or so to scrape down the side of the container if needed.)</li> <li class="instruction" itemprop="recipeInstructions">If you are using quick-set agar powder, add it to the blender without extra water and blend until smooth, then skip to step 6. Otherwise, place the agar powder in a medium-size pot or pan. Use a fork to whisk the ½ cup water into the agar. Let the mixture sit for 1 minute. The agar may thicken a little.</li> <li class="instruction" itemprop="recipeInstructions">Vigorously stir the mixture over medium heat for 5 minutes. The powder will dissolve completely, and the mixture should bubble, boil, and froth a little. When it thickens to look like dense and slightly glossy applesauce, it’s ready.</li> <li class="instruction" itemprop="recipeInstructions">Quickly and very carefully scrape the agar mixture into the full blender before it solidifies. Use caution! Hot agar is painful and difficult to remove if it drips on your skin. Blend the mixture until thoroughly combined, about 1 minute. Pour the cheese mixture into a clean pot or pan. Stir it frequently over medium heat as the mixture simmers and starts to change from thin to lumpy.</li> <li class="instruction" itemprop="recipeInstructions">Stir the mixture continuously in order to eliminate the lumps and create a smooth texture. It will thicken dramatically as it heats. Stir, fold, and knead for 5 to 7 minutes to fully activate the agar powder and cook the tapioca.</li> <li class="instruction" itemprop="recipeInstructions">Lower the heat if you feel any sticking in the pan or if the blend “spits” too much. Turn off the heat when the Brie is shiny and coats the spoon thickly—you may even see stretchy strings.</li> <li class="instruction" itemprop="recipeInstructions">Pour the hot Brie into the form or container and allow it to cool, uncovered, in the refrigerator. It should firm up in about 30 minutes, depending on the brand and strength of the agar powder. (Note: You can speed up the cooling process with 15 to 20 minutes in the freezer—just don’t forget it there!)</li> <li class="instruction" itemprop="recipeInstructions">Once the cheese is firm, use a silicone scraper, if needed, to gently remove the Brie from the form.</li> <li class="instruction" itemprop="recipeInstructions">Spread the remaining 1 tablespoon tapioca and the white pepper on your work surface and blend evenly.</li> <li class="instruction" itemprop="recipeInstructions">Very gently roll the Brie wheel (it is tender), covering the top and sides. When covered, it will look powdery smooth, just like Brie. Pat off the excess powder. It’s ready to plate and serve!</li> <li class="instruction" itemprop="recipeInstructions">Store your Brie in a dry, covered container in the refrigerator. Repeat the process to assemble the remaining quesadillas. Loosely cover the tortillas with a piece of unbleached parchment paper and then tent with foil. Remove from oven and carefully uncover the quesadillas (the steam will be very hot!) and bake an additional 5 to 10 minutes or until the quesadillas are slightly crisp and golden on top. Put the pan on a wire rack. Let cool for 5 to 7 minutes. <p>My health coaching clients often tell me that they don’t have much time or energy to cook dinner once they get home from work in the evenings. I get it – so many of us have super busy schedules. I always suggest meal prepping by cutting vegetables and storing them in containers when they get home from the grocery store, cooking up a batch or two of beans and grains on the weekends, and preparing whatever they can in advance.</p>

<h2><span style="color: #993366;"><em>Vegan Meal Prep</em></span></h2>
<p>JL Fields knows a thing or two about meal prep, and she’s sharing her secrets in her newest book <a href="https://amzn.to/2DLhSKz" target="_blank" rel="noopener"><em>Vegan Meal Prep</em></a>. As you may have guessed from the title, this book is all about preparing foods in advance, so you don’t have to spend a ton of time in the kitchen once your hectic work week starts.</p>
<p><em>Vegan Meal Prep</em> is divided into two parts: <em>Vegan Made Easy</em> and <em>Recipes</em>. In <em>Vegan Made Easy</em>, JL shares the benefits of meal prepping and meal prep principles. She lists her go-to ingredients as well as her favorite storage containers. She also includes her formula for filling mason jars and reheating tips.</p>

<p>Each recipe includes storage and reheating instructions. If a recipe can be made in a pressure cooker or air fryer, JL has included instructions for them, as well.</p>

<p>There’s a scene in the documentary<em>What the Health </em>that has stuck with me in the year or so since I watched it. Filmmaker Kip Anderson is interviewing Dr. Robert Ratner, the chief scientific and medical office of American Dietetic Association about the rise in diabetes in the U.S. Dr. Ratner explains that diet and exercise are to blame. But when Kip asks which diet in particular causes it, Dr. Ratner doesn’t have an answer. When Kip asks about studies that show a plant-based diet can both prevent and reverse diet, Dr. Ratner gets defensive and—for lack of a better word—freaks out. He ends the interview on the spot.</p>
<p>The encounter with Dr. Ratner isn’t the only strange behavior Kip Anderson and his film partner Keegan Kuhn encounter while working on <em>What the Health</em>. But fortunately, they do meet plenty of doctors who are willing to discuss the health benefits of a plant-based diet.</p>

<p>Their new book, which is aptly titled <em><a href="https://amzn.to/2Fxc9KL" target="_blank" rel="noopener">What the Health</a>, </em>is a companion piece to the film. It chronicles their exploration of our broken about our industrial food, medical, and pharmaceutical systems. It also delves into the benefits of a whole-foods, plant-based diet, as well.</p>
<p>I have many books that cover the health benefits of a whole-foods, plant-based diet. What makes this one different is that it’s chock-full of knowledge from multiple sources. Kip and Keegan interviewed lots of experts, include Dr. Michael Greger, Dr. Joel Kahn, Dr. Michael Klapper, Dr. Milton Mills, and many, many others.</p>

<p>I have several other large cookbooks such as this one, I find that the can be so overwhelming, since they have so much info in them. <em>The Ultimate Vegan Cookbook </em>makes finding a recipe easy though, since each chapter is dedicated to a different type of dish. Also, the recipes are marked, letting you know if special equipment is needed or if it’s a quick prep dish.</p>

You will slowly toast this mixture. It will start out a pale white, and then after about 15 minutes, it will be a light brown. After 15 more, it will be more maple colored.</li> <li class="instruction" itemprop="recipeInstructions">The most important thing is to not let this burn, so stir often throughout the roux cooking process. If you burn it, you must throw it out and start again. So go low and slow. Since this process takes about 30 minutes, I like to prep my veggies while this is cooking. Cut a little, stir the roux, cut some more, etc.</li> </ol> <div class="ERSSectionHead"><strong>For the Sauté</strong></div> <ol> <li class="instruction" itemprop="recipeInstructions">Once the roux is a medium brown and begins to smell almost like toasted nuts, add the onion, bell pepper and garlic. Turn up the heat to medium-low; stir and sauté until the veggies begin to soften, about 10 minutes.</li> <li class="instruction" itemprop="recipeInstructions">Add the herbs and spices. You can leave the salt, pepper and cayenne to add before serving if you want. Or start small and add more at the end if you’re not sure how you like it yet.</li> </ol> <div class="ERSSectionHead"><strong>For the Simmer</strong></div> <ol> <li class="instruction" itemprop="recipeInstructions">Add the water, okra, butternut squash and andouille (or beans). Cover and let it cook over medium-low heat until the okra and squash are soft, about 20 minutes.</li> <li class="instruction" itemprop="recipeInstructions">Taste and reseason with salt, pepper and cayenne as needed. I make ours very mild since I’m the only one in my household who likes spicy food. Bake for 25 minutes, or until a toothpick inserted into the center of a muffin comes out clean. Put the muffin tin on a wire rack and loosen the sides of the muffins with a knife. Let the muffins cool for 10 minutes. Carefully remove the muffins and put them directly on the wire rack. Let cool 5 minutes and serve. <p>One of the things that I hear frequently from my health coaching clients is that they don’t feel inspired to cook dinner after coming home from a long day at the office. Luckily, Robin Robertson is here to help with her revised and expanded edition of <a href="https://amzn.to/2R1Qziy" target="_blank" rel="noopener"><em>One-Dish Vegan</em></a>.</p>

<p><em>One-Dish Vegan </em>originally came out in 2013, and few things have changed since then. Cookbooks are now loaded with gorgeous full-color photos, and ingredients such as jackfruit are becoming more ubiquitous. So Robin has revised and updated her beloved cookbook to reflect those changes. This new edition has 25 more recipes, so if you do have the first one, you’re going to want to add this one to your library, too.</p>

<p>Robin begins <em>One-Dish Vegan </em>with info that newbie vegans will find handy, such as how to cook dry beans, how make your own seitan, and how to cook without oil.</p>
<p>If you’re already a pro in the vegan kitchen, you can dive right into the recipes. These dishes are all easy to make using ingredients are readily available at most grocery stores. They are all one-dish meals that are perfect for dinner – or for lunch, if you’re really hungry! You’ll find a few brunch – or breakfast for dinner! – recipes too, including a Layered Brunch Bake and Frittata Primavera.</p>
<p>The recipes range from soups and big salads to pastas, stir-fries, and casseroles. You’ll find summery light fare, such as Smoky Chickpea Salad with Mango and Avocado and Risotto with Artichokes and Mushrooms, as well as hearty comfort food dishes, like Butternut and Cremini Lasagna and Southwestern Mac and Queso. There’s even a whole chapter devoted to chili!</p>

<p>While these dishes are all healthy, well-balanced meals that can be served in one bowl, not all of them can actually be cooked up in one pot. A lot of them can be, but there are some that consist of components that are cooked separately and combined before serving. Sometime require sauces to be cooked in a different pot before it’s added to the dish, while others might call for a crust to be prepared separately before being filled with sautéed vegetables and baked.</p>
