Nut Butter Universe CoverNut Butter Universe by Robin Robertson is a culinary treasure filled with creative ways to make delicious protein-rich recipes for breakfast, lunch, dinner, dessert, and snacks.   • Penne Primavera with Avocado Cashew Cream

  • Chocolate Macadamia Truffles

Sweet Potatoes 6The recipes range from starters, soups, and sandwiches, to main dishes, breakfasts, and desserts. Many of the dishes are perfect for holiday cooking, such as Chestnut and Winter Vegetable Potpie, Stuffed Squash with Brazil Nuts and Pistachios and Roasted Sweet Potato Salad with Almond Butter.     Growing up I never had nut butters (other than those nutter butter cookies)! I’ve only recently discovered that I do in fact like this stuff. So far, I am a fan of almond butter but tahini is my favorite (does that count?). Would love more ideas than sticking it in bread or smoothies!
