Cookbook Review: I Like Toast by Stephanie Strowbridge

UnknownWhen I first went vegan many years ago, there were about 5 vegan cookbooks on the market, and they each covered vegan cooking in general, since it was pretty much a foreign topic at the time. Nowadays the vegan cookbook market seems to be exploding (so much so that Barnes and Noble changed the sign in the section from “Vegetarian Cookbooks” to “Vegan Cookbooks”), and there seem to be cookbooks on every specialized topic you can think of – pizzas, casseroles, salads, sandwiches, tacos, and even cheese. I thought that every vegan genera had been covered, but then I Like Toast by Stephanie Strowbridge arrived in my mailbox. I’m actually kind of surprised that it took so long for a toast cookbook to be written, as everyone loves toast, and it’s a pretty versatile food.

 

MeOf course, toast in its self is easy to make and doesn’t really require a recipe. I Like Toast is full of recipes for toast creations, toasted sandwiches and what to put on your toast. Who wouldn’t want to sit down to a breakfast of Cherry Delight Toast or S’Mores toast? Or how about an Avocado Lover’s breakfast sandwich made with slice avocado, scrambled tofu and vegan cheddar? What better way to wake up than to the Morning Salsa Dance sandwich, made with scrambled tofu, avocado and, of course, salsa. The Loaded with Goodness sandwich really is loaded with goodness, as it’s stuffed full of scrambled tofu and healthy veggies.

 

 

Cranberry Apple ConserveIn addition to toasty meals, I Like Toast has recipes for creative, easy-to-make jams, spreads, and conserves, such as Apple Cranberry Conserve, Pineapple Coconut Crème Spread, and Carrot Cake Jam.

 

This isn’t just a book about toast. It’s also about mornings, and breakfast. Stephanie encourages everyone to spend some time creating a sustainable morning routine that helps prepare for the day ahead, rather than running around unprepared each a.m. With I Like Toast, your mornings will be off to a good start in no time!

    My favorite toast topping is smashed avocado with a dash of sea salt. Sometimes, I’ll throw on some reduced balsalmic vinegar if I’m feeling fancy. Delish!

    Wow, what a specific topic for a cookbook!

    Favorite topping? Probably vegan nutella. I’m way too lazy to make that too often, so usually I just stick with a pat of margarine and raspberry jam.

    I like toast too! Vegan Earth balance butter, peanut butter, jelly, sugar & cinnamon, chocolate almond butter, cream cheese/avocado/tomato/onion, and more!!

    I love Rye Bread toast–plain with just a “butter” spread, or with avocado, or with a split grilled Field Roast sausage on top. Dave’s Killer Bread “Rockin’ Rye is my current favorite for toast.

    Right now my favorite topping is freshly mashed avocado with a little salt. Very simple, but I didn’t used to like avocado so for me it’s a new thing!
