Breakfast Quinoa Pizza

Sweet Quinoa PizzaYou saw my last quinoa pizza recipe right? Did you try it? ‘Cause how much easier can it get to make pizza dough? I mean, just boil some quinoa then process with water and bake. Easy-peasy. I have wanted to make a sweet pizza for a very long time, but I just never wanted to break out the flour and rolling-pin for crust. It was just too much trouble. But quinoa crust? So easy that I knew it was time. And it’s the perfect pizza you can enjoy for breakfast or dessert!

I love pizza like any other person … and sandwiches. How do those two things correlate? Well crusty goodness and sweet treats. Meaning you are going to take the awesomeness of a sweet peanut butter sandwich and slather that all over a pizza crust. And not just any pizza crust, but a quinoa crust. I made my own sweet almond butter for the “sauce” and sliced apples super-thin with my mandolin – carefully I might add – no cuts please. I just can’t get over how easy it is to do this crust. Again, I spread it out super-thin on my smallest baking sheet covered with oily parchment paper. You can use whatever fruity toppings you like, but since I am so wanting Fall and cooler weather to get here I was in an apple mood. Hope you enjoy!

Breakfast Quinoa Pizza

Ingredients

  • 1 cup  quinoa
  • 2 cup water
  • 2 teaspoon cnnamon
  • 1/3 cup unsweetened vanilla coconut milk
  • 1 cup raw almonds
  • 3 tablespoons maple syrup
  • 1 gala apple, sliced thin

Preparation

  1. Bring quinoa and water to a boil then lower heat and simmer about 20 minutes or until water is gone and quinoa is fluffy.
  2. Set oven to 425 degrees. Once cooled enough to handle, place the quinoa in a food processor then sprinkle in cinnamon.
  3. Turn on the food processor and drizzle in milk and process until quinoa forms a round ball. You may need to stop and scrape sides or bottom.
  4. Line a baking sheet with parchment paper and cover with a little olive oil. Dump the quinoa on sheet and spread out to edges with fingers.
  5. Bake 20 minutes.
  6. In a small food processor, process almonds and maple syrup into butter.
  7. Flip the quinoa crust onto a large cutting board and peel off parchment paper.
  8. Reline baking sheet with parchment paper and oil then slide crust back on sheet. Bake 10 minutes.
  9. Take out and spread on almond butter and lay out apples.
  10. Bake 10-12 minutes.
  11. Slice and enjoy!
