Mexican food tops most vegan’s “Food I Could Eat Everyday” list. Who can argue with easy, simple, spicy and comforting dishes?  The internet agrees, and is overflowing with recipes. There is even a veganmexicanfood.com! Below are some of my favorite Mexi-inspired dishes for your enjoyment.

    I made the enchiladas and the tempeh tacos. Those tacos are so freaking good I almost peed my pants!

    I make those tacos all the time! Protip: You can make the tempeh ahead of time and freeze it. Then when you want tacos you can make them in like, 5 minutes.
