<h2><span style="color: #993366;">No Refined Sugar or Artificial Sweeteners</span></h2>
<p>As you may have guessed from the title, <em>Naturally Sweet Vegan Treats </em>is dedicated to healthy plant-based desserts. The book contains more than 85 recipes, which are all free from refined sugar and artificial sweetener. These treats are sweetened with natural alternatives, such as nuts, spices, vegetables, fruit, maple syrup, and coconut sugar.</p>
<p>Most of the book’s desserts are made with whole-grain flours, and some feature hidden veggies, too. Many have gluten-free options, and of course, all are free from animal products such as eggs, butter, and cows’ milk.</p>

<h2><span style="color: #993366;">Vegan Baking</span></h2>
<p>Many people tell me that they know how to cook vegan, but baking can be tricky, since they’re not sure how to replace animal products in treats. Marisa has included lists of egg replaces and dairy alternatives to make things easier. She also includes a list of her favorite natural sweeteners, too.</p>
<p>Quite a lot of the recipes in <em>Naturally Sweet Vegan Treats </em>are great-tasting, healthy vegan versions of classic favorites such as Chocolate Cupcakes with Fudge Frosting, Gingerbread Cookies, and Veggie Patch Brownies. There are creative new-to-me treats, to, like Pear and Cardamom Pudding, and Saffron &amp; Marzipan Lucia Scrolls, and Banana Kladdkaka.</p>

<p>While you will find plenty of recipes for cakes, pies, and cookies that are perfect for celebrations in <em>Naturally Sweet Vegan Treats</em>, you’ll also find everyday treats such as puddings, muffins, breads, and even scones. Some will feed a crowd, such as the Double Choc Doughnuts, while others are perfect for date night, like the Blueberry Crumble for Two.</p>
<p>Since Marisa was born in London and lives in Sweden, she’s including some European favorites, too. “Hobnots” with Rosemary and Chocolate are inspired by the British favorite Hobnobs. No-Bake Love Yummies are based on the Swedish classic kärleksmums.</p>

<li>1/4 cup (27.5 g) minced carrots</li>
<li>1 tablespoon (15 ml) olive oil (*or use water to make no oil added)</li>
<li>1/2 small onion, minced (about 1/4 cup [50 g])</li>
<li>1/4 cup (37 g) minced green pepper</li>
<li>2 cloves garlic, minced</li>
<li>1 teaspoon chili powder</li>
<li>1 teaspoon dried oregano</li>
<li>1 teaspoon cumin</li>
<li>1 (14 oz [500 ml]) can kidney beans, drained and rinsed</li>

Cook for 15 to 20 minutes or until the steel­cut oats are cooked through but still chewy.<br />
While the oats are cooking, heat the olive oil in a large saute pan over medium heat. Add the onion and saute until translucent, then add the green pepper, garlic and spices and cook for another 2 minutes.</p>
<p>Once the oat mixture is cooked, add it to the saute pan and mix the oats in with the veggies. You want to keep cooking until the oats dry out some and begin to separate. Keep cooking until it starts to look like crumbles.</p>
<p>Mix in the kidney beans, green chilies and kale. Cook until the kidney beans are thoroughly heated.<br />
Right before serving, add the lime juice, cilantro and salt. Serve in hard or soft taco shells, or in burritos. They are also amazing on top of nachos.</p>

<p>I can’t help but add some lemon wherever I have blueberries! If you aren’t fond of the combination, use vanilla or almond extract instead. It’s very important to cook these waffles at least 5 minutes, if not more. If the waffle is not ready, it will make a mess.</p>
<p><em>Makes 4 waffles</em></p>
<p><span style="color: #993366;"><strong>Dry Ingredients</strong></span></p>
<ul>
<li>3/4 cup (69 g) finely ground rolled oats</li>
<li>or oat flour</li>
<li>1/2 cup (48 g) rolled oats</li>
<li>1/4 cup (39.5 g) rice flour</li>
<li>1/4 cup (37.5 g) almond flour</li>
<li>1/2 teaspoon baking powder</li>
<li>pinch of salt</li>
</ul>
<p><span style="color: #993366;"><strong>Wet Ingredients</strong></span></p>
<ul>
<li>1 cup (148 g) blueberries (fresh or frozen)</li>
<li>3/4 cup (180 g) nondairy milk</li>
<li>1/2 cup (127.5 g) applesauce</li>
<li>2 tablespoons (14 g) ground flax mixed with 4 tablespoons (59 g) warm water</li>
<li>1/2 teaspoon vanilla extract</li>
<li>1/2 teaspoon lemon extract (or 1/4 teaspoon lemon oil)</li>
</ul>

<p>Mix the dry ingredients together in a large bowl until well combined. In a different bowl, combine the wet ingredients and mix well. Then pour the wet into the dry and mix thoroughly.</p>
<p>Set the batter aside for 10 minutes to let the rolled oats soften. Please note that this batter is very thick. Preheat your waffle iron at medium-high temperature if you have that option. The waffle iron should be hot once the batter is ready.</p>
<p>I suggest spraying the top and bottom plates with some spray oil, but you can make it oil-free* by just relying on the nonstick coating. If you choose to use no additional oil, make sure the waffle is completely cooked. If any of the outside is not crispy, the waffle will tear, stick and generally make a mess.</p>
<p>Place about 1⁄3 cup (80 ml) of batter in the middle of the waffle iron and spread into a circle with a wooden spoon or silicone spatula. When you place the top down, the batter will spread. If your mixture gets too thick to spread, add a little nondairy milk to loosen it up.</p>
<p>Cook according to your waffle iron instructions, about 5 to 8 minutes. With my waffle iron, the first waffle takes 8 minutes. As you make additional waffles, the process gets a little faster until it takes 5 minutes for each waffle.</p>

<li>2 tablespoons minced fresh mint or 1⁄8 teaspoon mint extract</li>
<li>zest from 1⁄2 lime or 1⁄4 teaspoon lime oil</li>
<li>1⁄2 teaspoon rum or rum extract, optional</li>
<li>1 tablespoon agave, to taste (or your choice of sweetener, to taste)</li>
